"1 Bowl” Recipe From a 4 Star Chef: Sweet Potato Muffinsfrom Chef Matthew Karp of Plates Restaurant (November 17, 2005) Nostalgia keeps our Thanksgiving table the same year after year. Turkey, stuffing, gravy, sweet potato….sweet potato? Is it time to revisit the Thanksgiving staple that is often passed over in an effort to save room on the plate? Here’s a fresh look at an old familiar Thanksgiving “must have” that keeps it simple yet new. This uncomplicated recipe is easy to serve and doesn't add an afternoon's worth of preparation. And who doesn’t like a muffin?
Mix wet ingredients in one bowl and dry ingredients in another. Combine wet and dry ingredienets without over mixing. Bake in muffin tins at 350° for 25 minutes. Serve in a basket – great for the next morning too! For the rest of the meal, you can get a farm-fresh turkey through Plates Restaurant.
