“I Have No Idea What’s For Dinner!”

Penne Pasta with Cherry Tomatoes

(September 23, 2004) I don’t know about your house, but in my house at least one of my four children asks me at around 5 o’clock, “What’s for dinner?” I am usually quite prepared for dinner and recount to them the evening’s menu. Despite the groaning, rolling of eyes and general disappointment, I make what I have planned and most of us sit down to eat together each evening.

Needless to say, I was very happy to read the latest report that states that eating dinner together helps to prevent everything from drug and alcohol abuse to a host of other nasty habits that teenagers tend to get into. Monday, September 27th has been declared “Share a meal with your family day” for this reason.

Whether dining together is a preventative or not, it’s been a very important part of my family life and I hope that my kids will hold on to the idea of “Family Dinners.”

This afternoon at about 4:30, my youngest son asked that most important question, and I had absolutely no idea what to make for dinner. A desperate
search through the pantry and vegetable bin produced a very delicious dinner of penne pasta with cherry tomatoes, some leftovers and a salad. Try this recipe the next time you run out of ideas; you probably have all the ingredients in your kitchen, too.

Penne Pasta with Cherry Tomatoes

2 T. olive oil
4 large shallots, minced
12-16 cherry tomatoes, quartered
½ cup white wine
½ cup vegetable stock
Salt and freshly-ground black pepper
¼ cup fresh chives, minced
½ cup grated parmesan cheese
Penne pasta, one package cooked according to directions on package

Heat a large sauté pan over medium heat and add the oil. When the oil is hot, add the shallots and cook until softened and starting to brown. Add the tomatoes and cook for about 5 minutes and then add the wine and the stock. Cook for about ten minutes, seasoning to taste with the salt and pepper. Add the chives and cook another minute.

Cook the pasta, drain, and pour it into a serving bowl. Mix in the parmesan until it melts and then add the sauce. Serve immediately.

Serves 4-6
